pears and honey
My birthday falls on March 31…this year that means Easter Sunday. I love birthdays but, the more I have the less fun the build up and the more I think about what I want to do and when I’ll be able to do it. Sometimes this sends me into a semi-dramatic panic (or mega-dramatic panic depending on who you ask lol). Last weekend I decided to find a meditation class close to my home with regular guided meditation groups. So when I do panic or feel over whelmed I can go (I would also just love to have a regular meditation practice be part of my life) . I found one just around the corner from me and asked my bestie to come. She JUMPED on board! I thought we’d have a small quick lunch at my place then wander down and check it out. Nicki (my best bud) almost annually throws me a super fun birthday party, throws epic dinner parties and makes the most incredible food (you can see her recipes and her beautiful photo’s at http://www.ibbyandpop.com/). We rarely get a chance just the two of us, so I thought I’d find something easy and awesome to make for lunch. I searched for something a little different we could eat quickly, feel full but not stuffed. I found a recipe for yummy roasted pears on toast, sprinkled with mild blue cheese, broiled and drizzled with honey. We whipped up a quick salad and devoured the sweet and savory lunch. I was so busy giggling and laughing (at one point I thought my coffee would fly out my nose) I forgot to take pictures. Thankfully my wonderful boyfriend shot some great pictures while Nic and I carried on with our lunch date. I was cover up to my elbows in honey and we munched and chit chatted the afternoon away….missing the meditation class altogether. We didn’t mind.
- 6 pieces bread from a fresh baguette
- 3 pears
- 1/2 medium onion
- 2 tablespoons olive oil
- ¼ teaspoon salt
- ½ cup mild blue cheese, crumbled
- honey, for drizzling
- Preheat oven to 375˚.
- Core pears and slice into ¼” slices. Slice onions in ¼” slices as well and toss with pears, 1 tablespoon olive oil, and ¼ teaspoon salt. Roast until tender, 30 minutes (or until golden and soft).
- Brush slices of bread with olive oil and place under broiler for about 1 minute, or until toasted.
- Remove and top with roasted pears, onions, and cheese. Place back under broiler and toast again for 1-2 minutes or until cheese is browning. Remove
